Hello my darlings,

Overnight oats are an easy protein option for a breakfast on the go! I love this option for breakfast fuel because you can dress oats up however you want – make them decadent if you want or pack them full of nutrients. For this particular recipe, we are going to focus on ingredients for glowing skin: strawberries and rhubarb. Not only will you be able to make this into a delicious edible recipe but you’ll also be able to use as clean skincare!

Strawberries are an excellent little powerhouse for your skin. Not only do these little berries contain vitamin C which aids in protecting the skin from signs of aging, especially protecting the skin from UV damage, but they also are a natural source of salicylic acid. Salicylic acid gently refines the texture of your skin by exfoliating dead skin and removes impurities from inside your pores when applied to the surface of the skin. So eat your oats knowing that vitamin C works from the inside to heal & protect your skin. And the acidic properties don’t just need to be applied, you’ll find that strawberries can restrict oil production which can help clear your skin (especially acneic skin) as long as you are balancing with healthy oils/moisturizers in your skin care ritual.  

The Power of Rhubarb

Did you know that when we are talkin’ antioxidants, rhubarb packs a stronger punch than kale? I know, crazy right! Antioxidants work to combat free radicals and neutralize the damage they impact on the skin, protecting your collagen, elastin and hyaluronic acid (strengthens your acid mantle and keeps your skin hydrated). Antioxidants work inside your body and on the surface of your skin. Polyphenols are another fabulous element Rhubarb brings to the table, helping to rejuvenate your skin and preserve your youthful appearance.

Make Your Strawberry Rhubarb Compote into an Exfoliating Mask

Due to the salicylic properties of the strawberries, and the vitamin A in rhubarb, you can turn your strawberry and rhubarb mixture into a face mask that will resurface and refine your skin, cleaning out your pores to shrink their appearance and leaving your skin feeling soft. To use this recipe as a mask, I recommend removing from the stove and allowing it to cool to a comfortable temperature before applying to your face. If you want to go the extra mile, add a little tapioca flour or corn starch to thicken your mixture, a tablespoon should do the trick. Add this while you are still cooking your compote. 

Tips for the Best Overnight Oats

When making overnight oats, you can absolutely use just plain rolled oats. Oats have many benefits for the skin and for your health, but I like to take things to the next level by adding steelcut oats, quinoa, chia seeds and coconut flakes to my mix. This will boost your recipe with fiber and protein. 

The second thing to keep in mind is I prefer to turn my strawberries and rhubarb into a compote (a cooked mash of fruit) to store separately from my overnight oats but you can mix everything together in the same jar if you want more of an immersed flavor.
