Basic Holistic Bread Recipe

Hello my darlings,

This bread recipe is what I use when I am craving bread but I don’t want to spiral about grocery store brands, extensive ingredient lists, preservatives, inflammatory ingredients, etc. When I got diagnosed with leaky gut and my doc told me to cut out all inflammatory ingredients including soy, gluten, sugar, and dairy, it got really hard to shop for groceries. I’ve always been good at making home cooked recipes but I was always like, “I don’t have a bread maker.” Well guess what. You don’t need one! This recipe only has 5 main ingredients, 6 if you include water. Now I can eat bread again and I don’t feel guilty or awful after I eat it.

*Note, I do not have a gluten sensitivity anymore now that my leaky gut has healed, so I do like to use a flour that contains gluten. I don’t eat gluten all the time, but when I do, I like to know I am using a reliable source. Sometimes I will use stone ground flour from my local co-op but most often I use King Arthur Organic Bread Flour. Life is about balance. Mentally it is important to me to be able to eat certain foods like dairy and gluten when I feel like I am choosing the right sources. You can’t control everything and being at peace with this fact is an important mental health practice. If you are gluten free, you can easily use 1:1 Gluten Free Flour mix (recommended by an aunt with celiac who swears by this brand).

Basic Holistic Bread Recipe

Prep time: 15 minutes

Cook time: 30 minutes

Rising time: 2 hours divided

 

1 2/3 cups of luke warm water

2 1/4 tsp yeast (instant or active dry)

1 Tbsp honey

1 tsp salt

1 1/2 Tbsp ghee

4 1/2 cups flour

Directions

#1. Add yeast & honey to warm water.  Make sure your water is LUKEWARM. If the water is too hot, it will kill the yeast. If it is too cold, the yeast will not get foamy. You want very foamy yeast for this recipe so the bread will rise properly. The honey will also aid in this. I typically add the honey to the water first, let it dissolve and let the water cool a little since I usually overheat the water and end up letting it sit until it’s the perfect temperature. Mix the yeast in and make sure it’s saturated in the water, a fork or your fingers work well for this.

#2. In a large mixing bowl, add your flour and thoroughly mix in the salt.

#3. Add your room temperature ghee. If you melt the butter your bread will not turn out exactly right so room temperature is kind of important. To get it to mix properly, I will usually cut the ghee into small cubes or bits.

#4. Once the yeast is foamy (give it 5 to 10 minutes) you can combine this with the flour. You’ll want to be sure everything is combined into a sticky dough but don’t over mix. Don’t do more than 5 minutes on medium.

#5. Cover your mixing bowl with a towel and let the dough rise for an hour. You’ll want to make sure it is warm. If your house is cold, put  it in a sunny window or near a heating vent (just make sure your doggos can’t get into it). 

#6. When you next check your dough, you should see it has risen about double in size! Oil your bread pan with a little olive oil (or any oil you prefer will work).

#7. Remove the dough from the bowl, you may need a spatula to do so. It’s best to use a little olive oil on your hands to prevent the dough from sticking to your fingers. Wrap your dough into a ball shape, tucking the ends underneath and set your bread into the pan. 

#8. Again, cover the dough and let rise for about a half hour. 

#9. Preheat your oven to 350 degrees. 

#10. Place your bread pan into the oven and bake for 30 minutes. 

#11. Everyone’s oven is different. I usually double check my bread at 25 minutes. If the top is getting too brown, I will take it out early. Remove from the pan and let cool. Not too much though, there is nothing as good as a slice of fresh bread.
